Is 4:00am early or is it just me that seems to be up at this hour? I had to try out my new snow bib's this morning to see if they kept me warm?? Yep, they do! I'm attending our local rock n roll radio station's event this weekend on my girlfriend's lake where they cut through the ice and
idiot's (we won't mention any names) "plunge" into the water??? Mind you, the water has to be
like -1000 degrees. Di and I will be sitting back warm and comfy sitting on a snowmobile
watching from afar. Photo's to follow...check back!! So I decide at 4:00am to shovel my own
driveway this morning. "Blue Knight" got me going on that. Not that Bobcat dude can't do it, I'm
sure he appreciates one less driveway to clear but I enjoy shoveling. You get to see your
accomplishment while clearing! Just as you do mowing the lawn. Give me a riding lawn mower
and I'm a happy gal. I solve all the world's problems mowing acres of lawn. Oh wait, I don't have
a lawn to mow anymore because I'm in a townhouse. Anybody need their lawn mowed?

Luna how is that cable lead workin' for ya??? Dork!!

American Idol

Oh my's must be so hard to appear in front of millions of people and sing your heart out and then get cut........BOO! Asia'h got cut this evening and I loved her! I thought she'd go all the way. She has a wonderful voice. I'm hoping that a lot of producer's out there heard the same thing I did! This won't be the last we hear from Asia'h. She's a beautiful and talented girl.

And then there is 1/866-idols-10 (17 year old David Archuleta). I voted for him Tuesday night. He was the last guy to sing and he ripped my heart out of my chest, threw in on the ground and stomped the ever loving cr#$ out of it..........he had me in tears.............had Paul Abdul in tears........ Let me explain one thing to you..........I am going deaf and I have 2 hearing aids. Still, I can only really hear out of 1 ear and what I do hear is, that being said..........I HEARD and FELT David sing and it was the voice of an angel.........................YOU ROCK DAVID!!!!!!

Another Happy Customer????

I come home tonight after work and see the Bobcat Dude's Skid Steer sitting on the street next to me. I realize 2" of snow is falling and he must have moved closer to my place for my snow removal?? Lucky me?? Or, he lives over at the "Party Boy's house? Have I found his residence? Maybe? I call my neighbor's "The Party Boy's House" because I get up at odd hours during the night letting my 4 month old puppy out to go potty and all the lights are always on there and 8+ cars/trucks are always parked there and I see ppl coming and going at that hour. Maybe, they all work third shift, who am I to judge?? The only time I've talked to one of the guys there is when my best girlfriend's two German Shepards ran away and I was handing out business type cards with my cell phone number on it so if they spotted said Shepard's they could call me. Deb and Bill finally found their dogs miles away. For another story. Any who!! I notice Bobcat Dude
has his equipment close to me for morning snow removel YEAH!! Get's better! Read On!
At the same time I see one of our tow trucks sitting on the "Party Boy's street. Remember I work for a major, large, gigantic tow truck firm here in Minneapolis and I happened to secure the towing contract for our Townhouse Community. We are not allowed to park overnight on our street's or you will get towed. So, here is Ken parked in front of a truck (one of the party boy's truck's or friend of the household) and has been instructed to tow the vehicle. I saw said vehicle parked there last night?? Who am I to police the parking? I have a puppy to tend to and don't give a rat's ass about parking issues in my community because me and my boyfriend when he's over (I'll refer to him as my "Blue Knight" for now, yet another story) park in my garage so therefore I don't have overnight parking issues on the street. That's our driver Ken. Everyone say Hi to Ken!

Marley The Lot Dog!

Here is a picture of "Marley". He is our ferocious "lot" dog. Did I mention that I'm the accountant for a huge gigantic tow truck firm here in Minnesota? (Don't they say that on game shows?) They've been in business 38 yrs, so they are doing something right. Marley's soul purpose in life is to guard our impound lot?? Keep all the "perp's" out, keep everyone on their best behavior. Well, as you can see the big bad ass that he is, is SLEEPING in my office at 1:30pm. This is Marley's normal position or he's sleeping next to me at my desk or next to the owner's wife Judie's desk. We have to "step-over" him numerous times during the day.
That night shift of watching the lot must really knock him out? - Kisses Marley !!! We All Love You !!...... Jennifer

Full Moon Dates For 2008

The Full Moon is one of my favorite things in the whole world to look at. A great sunrise is up there also! When I lived in Mexico I use to tell my family to go out and look at the full moon because I would be looking at the same moon and thinking about you! Was my own way of connecting to my family back in Minnesota. For those of you that would like to know when the Full Moon is every month, look no further!!! I haven't decided on another recipe to post yet, so instead I thought I'd do a little stand up comedy while I'm sitting down. Some musings on marriage and children..........

1. I've been married so long our oldest child is now my age.

2. I stayed with him the last 10 years just to piss him off.

3. We have divorced sooner, but neither one of us wanted custody of the kids.

4. When asked what is the secret of a long and happy marriage, I always tell people, I don't know about a happy marriage, but I do know what makes a long marriage................. children.

5. When our son reached his teen years, he developed quite an attitude. We often got into arguments where upon he would end up asking us why we had him............................I told him we didn't know it would be him.......................

Cute as a button?

Now aren't goats (aka does or nannies) cute as a button? Our new logo in process! Well, I think they are way more beautiful than buttons. Who made up that saying anyway, "cute as a button"? Sandi, can you research that one for us? My, I'm bossy tonight?? But Sandi, your SO GOOD at research!! Buttons are cute?

As I look down at my buttons and they are most always one color, boring, just a plain ol' button. Now goats are fun, cute and grass eaters?? I must admit, I've seen my fair share eat a car door right off thee ol' junker sitting out in the farmer's pasture. Am I right ladies????

Goats do not usually consume garbage, tin cans, or clothing, although they will occasionally eat items made primarily of plant material, which can include wood. They have an intensely inquisitive and intelligent nature: they will explore anything new or unfamiliar in their surroundings. They do so primarily with their prehensile upper lip and tongue. This is why they investigate items such as buttons, - see told ya buttons, cute as a, camera cases or clothing (and many other things besides) by nibbling at them, occasionally even eating them.

Just wanted you all to know that. There's that darn southern talk comin' out of my mouth. Any who!

Beef -- It's What's for Sunday Dinner!!!

I woke up this morning afraid (very afraid) to get out of bed. I was afraid every muscle in my body was gonna be stoved up from all the walking and bending over I did yesterday picking up trash off the highway. After the initial 15 minutes it took for me to be able to stand upright, and 3 ibuprofen, I was as good as new........well, maybe not new, but better anyway. But why do the bottom of my feet hurt, huh?

...........the pot roast looks very, very good Jennifer..........hmmmm......wonder if I could get there in time for dinner? What we're having (actually had last night) for dinner is *Skillet Tamale Pie* (with or without the skillet -- I'll explain later). I'd like to boast that there were NO leftovers!

What You'll Be A Needin'

1 pound ground beef
1 package Taco Seasoning Mix
1 onion, chopped
1 bell pepper, chopped
1 can (small) of green chilies
1 can (8 ounces) tomato sauce
1 can (14 ounces) kidney beans OR pinto beans OR ranch style beans (I use the latter), undrained
3/4 cup water
1 package (8 ounces) corn muffin mix
1 cup shredded Cheddar Cheese
1/4 cup sliced green onions

1. Brown meat, with onions and bell pepper in large skillet on medium-high heat. Drain fat
2. Stir in seasoning mix, tomato sauce, beans (only one kind -- not all 3 that I mentioned) and water. (I also added a can of green chilies to mine -- yum). Reduce heat to low; cover and simmer for 10 minues.
3. Meanwhile, prepare corn muffin mix as directed on package.

With the skillet:

Drop small spoonfuls of batter over meat. Cover. Cook on low heat 15 minutes or until corn bread is cooked through. Sprinkle with cheese and green onions. Cover. Cook on low heat until cheese is melted.

Without the skillet (Preheat oven to 400):

Pour meat mixture into a 9 x 13 casserole dish. Drop small spoonfuls of batter over meat. Sprinkle cheese (however much you want) over meat and then sprinkle green onions on top. Bake in oven for about 15 minutes or until cornbread and cheese is a golden brown.

Makes 6 (1-cup) servings

I don't gots no pictures to show you cause everyone ate it to fast................... :( I guess I could have taken pictures of everyone after dinner............all bloated and half asleep watching TV there's a pretty BON APPETITE!


What's For Sunday Dinner You Ask?

Well, it's pot roast of course! I think every Minnesotan has pot roast for Sunday dinner. I think? Here's mine! Recipe? No brainer...

  • Poke holes in the pot roast and shove tons of garlic inside
  • Sear that darn thing in EVOO (Extra Virgin Olive Oil) for those that don't watch Rachel Ray on the Food Network.
  • 2 cans of beef broth.
  • Plenty of carrots, onions, & potatoes or is it potato's? I like either spelling. I use those carrots that are already washed, cleaned and ready to go. I say to myself..self your worth paying an extra .50 so you don't have to stand over the sink and clean carrots the old fashion way?
  • A lot of herbs....Any, all of them, whatever you have in the cupboard.
  • Salt and pepper too.
  • Let the puppy sit all day, hours and hours 8-12 of them even.

I wonder what the Texan's are having tonight! Or maybe Sandi's feet are still sore from road clean-up that she won't be able to cook?

Bobcat Sighting...........

Uh, looks to me like someone just dumped their Bobcat there or sled skiff, or skiffer or skidder sled or whatever it you call it. Right where the sign specifically says.............NO DUMPING.............hahahaha........

The Dude's Bobcat

After stopping at my mailbox (townhouse community boxes) and winding my way back to my place, I see the Bobcat dude's "Bobcat" parked. So here it is. Mr. Bobcat! He must live here? I certainly don't know the answer to that. One of life's many mysteries? I must say, he is prompt with snow removal so he must live here? HEY, Bobcat dude do you live in my community????
And what is up with the sign behind him? It's new! No Dumping Allowed? Aren't we all adults here? Not that I would go and pitch my trash into the holler? Did I say holler? It's the southern thing coming out in me. Lived in the south half my life. Fix'n to try to get back to the Minnie-sota way of talkin'. Can I have a soda please!

Sandi's Shrimp Salad

Guess what I did this morning? I picked up trash off the highway for 2 hours. And no, I'm not a convict and while I was doing community service, it wasn't cause I misbehaved. Our group of Methodist Men at our church (I know I'm not a man...........but I was helping my man) adopted 2 miles (although at the time it seems like 10 miles) of highway and it's our responsibility to pick up trash. So I was awakened with coffee and told to get my lazy a$$ out of bed at 5:30 a.m.................*sigh*. I got my lazy arse out of bed and I didn't scream, kick, spit or pout once.........not even a little bit. I was proud of myself indeed! And now that's it's done, do I feel good about it? back hurts, and like a dumba$$ I wore my brand new cowgirl rubber boots (they actually look like pointy toed witches boots - see picture below) and they rubbed a blister on each one of my calves and pinched my toes so bad I started getting cramps in my tooties. Great, now I'm crippled...........HAHAHAHAHA.....................NOT!!! Fortunately I brought along a pair of tennis shoes and my husband picked me up and took me back to church and I was able to put on my tennis shoes..........ahhhhhhhhhhh....sweet relief.

Okay people, if you make this salad and serve it to guests I promise you people will start dropping to their knee's and kissing your tooties to get the recipe (except for Jennifer and her family - they're all allergic to shrimp -- hehehehe........more for the rest of us!!!!!). For the best ever flavor, this really needs to be prepared 1-2 days in advance, to let the flavors blend.

Things You'll be a Needin'

1 lb. medium sized shrimp, peeled, deveined and boiled (use your favorite shrimp/crab boil - following the directions on the box for boiling)
1 bunch of green onions, chopped - including some of the green tops
1 large dill pickle, chopped
1 Tbsp. of Old Bay Seasoning

After boiling your shrimp and peeling and deveining (is that a word???), cut each one in half (bite size pieces) and place in a bowl with the chopped green onions, the chopped dill pickle and the Old Bay Seasoning. Add enough mayonnaise to just coat everything lightly. You don't want the salad runny. Mix well and cover with plastic wrap and refrigerate over night. To serve, you can place the salad on a bed of lettuce on a platter or in a bowl. With or without crackers. This makes about 4 servings and the recipe can be doubled, or tripled VOILA! It's done!!!! BON APPETITE!!!

A New Breed of Goat

Yes...........we have a new and very special breed of goat here in my part of the country............we call it the Texas Chocolate Labragoat................... see................. LOL............just you actually believed did didn't you?

Here's the real deal, guys. A real live, eating, breathing, pooping goat. We have lots of these in Texas...........YEAH!!! Can you say.............C A B R I T O? This one is my neighbor. It's a she. There are 2 of them and both of them are she's and they make alot of noise. I like to call them Mabel and Maude. Isn't she just the cutest thing? NOT!!!!!

I noticed Jen put up a recipe of her Goulash..........hehehehe........looks delish and I love egg noodles................ :)

Tomorrow I'm going to post a recipe for my famous Shrimp Salad. People will be lining up at your door begging you for this recipe..........I GUARANTEE IT!


Well here's my end of the stick as promised, my pot of real Minnesota Goulash. Sandi's probably still driving in that vast land of Texas traffic trying to get home. She works in the BIG CITY and lives in the country so it takes her a gazillion hours to get home.

Recipe? I have none. Anything red in the refrigerator goes in the pot...Kidding, MN talk. Here's what I did to create this heavenly dish.

  • Brown 2 #'s of hamburger
  • Dice celery and onions and sweat those off in some butter.
  • Boil the noodles per box directions. I lived on the edge here and tried Egg Noodles. Yeah, the liberal me.......... I didn't go for the traditional elbow macaroni noodles but those work too.

  • Plop in a large stock pot the noodles, hamburger, celery & onions.

  • Add 3 large cans of tomato sauce and I mean the HUGE can's

  • Dice up some raw carrots. I use lots of carrots in all my tomato based sauces.

  • Add 2 cans of tomato soup

  • Add one can of dark red kidney beans

  • Add two cans of muchrooms

  • Add one can of corn

  • Add three cans of Ro-Tel diced tomato's w/green chili's

  • Add numerous shakes of salt, pepper, and crushed red peppers.

I simmered this covered for two hours. It freezes very well. It's very good!!

Personal Note: If you like HOT, in my next batch I'm going to add diced serrano and jalapeno peppers. I lived in Mexico for four years and have a love for their food. More recipes to come on that food subject!!


MN Snow Bank Education

Here is a Minnesota snow bank at the end of my driveway. It's only that high because the Bobcat dude put it there. When I mean "Bobcat" I really mean a Bobcat skid steer. I know, most of you call all skid steer's Bobcat's but that's not correct. Bobcat is one of many skid steer manufacturers. Bobcat makes a skid steer, Thomas makes a skid steer, OH NEVER get the drift!!!

......and now a word from TEXAS!

It's 1 degree in Minnesota and 75 degree's in brainer, eh? Plus..........we have goats here in Texas and right now we have all the geese from Minnesota too!! I don't think the goats are from Minnesota though. How lucky can one person get? Sheesh.....I've got it made.

Hopefully, Jennifer and I can keep you entertained with our brillance (and no.......we don't wear braces). We certainly entertain each other and laugh alot. You'll need to check back often to see what we've been up to.
